Fast Egg and Quinoa Breakfast Wrap

Breakfast is supposed to be the most important meal of the day, yet often times people skip this meal due to lack of time. Busy lives leave us neglecting this oh so important meal. This recipe is fast and easy and will get your day started right!

Yield: 4Quinoa_Egg_Breakfast_Wrap_2
Serving size: 1 wrap


  • 4 Whole Wheat tortillas
  • 4 Eggs
  • 1 Cup Cooked Quinoa
  • 1 Cup Fresh baby Spinach
  • 1 Cup Fresh Salsa or Pico de Gallo


  1. Scramble all 4 eggs in a nonstick skillet. Skip the extra calories and use a small amount of water instead of oil if needed.
  2. Warm the tortillas – Put a tortilla on a plate, covered with a damp paper towel. Alternate tortillas with paper towels. Microwave for 30 seconds.
  3. Assemble wraps by distributing 1/4 of all ingredients within each tortilla
  4. Wrap up and enjoy!
