Grilled Zucchini Gyros with Sun-Dried Tomato Tzatziki

If you have a garden that’s overflowing with veggies, you’re bound to be searching for a recipe that features your farmer’s market ready bounty. My favorite part about growing my own veggies is eating them all summer long – especially Zucchini. Beyond Zucchini Bread and Chips, try making these tasty Gyros.  Happy Cooking and Enjoy!

Grilled Zucchini Gyros with Sun-Dried Tomato Tzatziki

Ingredients

  • 6 tablespoons lemon juice
  • 3 tablespoon olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon smoked paprika or regular paprika
  • 1 tablespoon fresh oregano
  • 2-4 cloves garlic, minced or grated, depending on your taste
  • 1/2 teaspoon salt + pepper
  • 2 medium zucchini, sliced in 1/4 inch rounds
  • 2 cups button mushrooms, halved if large
  • 4-6 warm pieces of pita or naan
  • halved cherry tomatoes, sliced cucumber, kalamata olives + crumbled feta, for serving
  • 1 sliced avocado, for serving

Classic Vegan Falafel

Ingredients

  • 1 1/2 cups (300 g) dry chickpeas
  • 1/2 cup (30 g) chopped fresh parsley
  • 1/2 cup (80 g) chopped white onion
  • 7 cloves garlic (~21 g)
  • 2 Tbsp (12 g) gluten free oat flour (or gluten free flour blend)
  • 1 1/2 tsp sea salt, plus more to taste
  • 1 Tbsp (7 g) ground cumin
  • Pinch ground cardamom
  • 1 tsp ground coriander
  • optional: Pinch cayenne pepper
  • Grape seed (or other high smoke point) oil for pan frying

Vegan Matcha Cake with Vanilla Lemon Cream Frosting

A glass of iced green tea is a summer classic for the health enthusiast. It’s well known that green tea is full of powerful antioxidants and nutrients that are good for your body. Take your devotion to the next level – make this Vegan Matcha Cake with Vanilla Lemon Cream Frosting. Matcha powder is made of compressed green tea leaves through a de-veining and stone grounding process. As a natural sweetener, Matcha powder is most commonly used in Japanese confectionaries. For this recipe, all vegan ingredients and natural sweeteners are used – so you can have your cake and eat it too!

Vegan Matcha Cake with Vanilla Lemon Cream Frosting

Ingredients

For the Cake:

  • 2 cups light spelt flour

  • 2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 4 teaspoons matcha powder

  • 1/2 cup ripe mashed banana (1 medium banana)

  • 1/3 cup melted coconut oil

  • 1/3 cup pure maple syrup

  • 1 teaspoon vanilla extract

  • 3 tablespoons organic sugar or coconut sugar

  • 1/2 cup + 2 tablespoons unsweetened vanilla almond milk

  • 2 tablespoons lemon juice

  • 1 teaspoon lemon zest

For the Vanilla Lemon Cream Frosting:

  • 1 (13.5 ounce) can full fat coconut milk
  • 2 tablespoons brown rice syrup (or honey)

  • 2 tablespoons pure maple syrup

  • pinch salt

  • 3 tablespoons agar agar flakes

  • 1 teaspoon vanilla extract

  • juice of 1 lemon (1/4 cup)

  • 1 teaspoon vanilla paste (optional)

Midsummer Detox: Superfood Quinoa Bowl

Superfood Quinoa Bowl

Ingredients

For the Bowl:

  • 6 cups cooked quinoa
  • 1 medium head of broccoli, florets removed and chopped into bite-sized pieces
  • 2 cups frozen shelled edamame
  • 4 cups chopped kale
  • 1 avocado, peeled, pitted and sliced
  • 1/2 cup Blue Diamond Almonds
  • 1 batch Sesame-Soy Vinaigrette (see below)
  • toasted sesame seeds or chia seeds, for garnish

For the Sesame-Soy Vinaigrette Dressing:

  • 1/3 cup neutral-flavored cooking oil (i.e. vegetable oil, grapeseed oil, etc.)
  • 1/4 cup rice wine vinegar
  • 1 tablespoon honey (or agave, to make this vegan)
  • 2 teaspoons soy sauce
  • 1/4 teaspoon sesame oil
  • pinch of salt and black pepper

Happy 4th of July! As you head out on your travels this weekend, don’t forget to plan your contribution to the cookout! I’m crazy about this Independence Day Inspired appetizer – Grilled Blackberry, Strawberry, Basil and Brie Pizza Crisps. Yum! As far as preparation is concerned, it won’t take long plop these healthy pizza crisps down next to the grill master’s spread! One suggestion – be sure to pick a gluten free or whole wheat pizza dough as your base for the crisps! Altogether, this dish makes for a patriotic and yummy statement for your holiday celebration!   • 8-12 ounces brie, sliced
  • 1 1/2 cups strawberries, chopped
  • 3/4 cup blackberries
  • 1/2 teaspoon pepper
  • Balsamic Honey Glaze
  • 1/2 cup balsamic vinegar
  • 3 tablespoons honey
