Blackened Chicken Fiesta

With the end of summer in sight, I’ve been looking forward to all that there is to love about Autumn. Warm soups, savory squash dishes and pumpkin infusions – I can’t wait! However, with these last few days of Summer, it’s time to turn up the volume on your kitchen inspiration. Try this Blackened Chicken Fiesta dish to spice up your afternoon. Happy Cooking and Enjoy!

Blackened Chicken Fiesta

Ingredients:

For the Fiesta Salad:

  • 2 cloves garlic, minced
  • 3 tbsp fresh lime juice
  • 1 teaspoon extra virgin olive
  • 1 tsp cumin
  • pinch crushed red pepper flakes
  • 1/2 teaspoon kosher salt
  • 15 oz can chickpeas, rinsed and drained
  • 1 cup fresh cooked corn (from 1 large ear)
  • 1 cup cherry tomatoes, quartered
  • 1/4 cup minced red onion, finely diced
  • 1/4 cup cilantro, chopped
  • 4 oz diced avocado (1 small haas)

For the chicken:

  • 4 boneless, skinless chicken breasts
  • olive oil spray
  • 2 teaspoons paprika
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cumin
  • 1 teaspoon ground thyme
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder

With school back in session for many, it’s easy to let the dinner menu take the back-burner. My advice? Take advantage of that fresh summer produce while you still can! Toss together a yummy salad for a quick and easy way to deliver a nutritious meal to the whole family. Mix together this Summer Corn, Tomato and Avocado Salad with Creamy Buttermilk-Dijon Dressing for a meal that’s easy and delicious. Enjoy and happy cooking!

Ingredients

For the Dressing:

  • 1 tbsp minced shallots
  • 2 teaspoons Dijon mustard 
  • 2 tbsp white wine vinegar
  • 6 tbsp 1% buttermilk
  • 2 tbsp extra virgin olive oil
  • 1/4 tsp garlic powder
  • 1/2 teaspoon kosher salt
  • pinch black pepper

For the Salad: 

  • 1 head romaine, chopped (about 5 cups)
  • 1 medium corn on the cobb, cooked and cut off husk*
  • 4 to 5 large grape tomatoes, quartered
  • 1/2 large avocado (3 oz), sliced
  • 1/4 cup sliced red onion
