Beet Hummus Recipe

Happy Independence Day everyone! I have 2 words for you BEET HUMMUS. What?! Who knew that was even a thing, well I sure didn’t until I discovered this recipe on Oaks at Ojai. Like I always say don’t “beet” it until you try it!

INGREDIENTS

One medium sized garlic clove

½ cup chopped roasted beets

1 cup cooked white beans or cannellini beans

2 Tbs. olive oil

2 Tbs. fresh squeezed lemon juice

½ tsp. sea salt, optional

¼ tsp. ground black pepper, or to taste


DIRECTIONS

Puree all ingredients until smooth.  Serve with fresh veggies as a dip or with pita or tortilla chips

Superfood Quinoa Bowl

Ingredients

For the Bowl:

  • 6 cups cooked quinoa
  • 1 medium head of broccoli, florets removed and chopped into bite-sized pieces
  • 2 cups frozen shelled edamame
  • 4 cups chopped kale
  • 1 avocado, peeled, pitted and sliced
  • 1/2 cup Blue Diamond Almonds
  • 1 batch Sesame-Soy Vinaigrette (see below)
  • toasted sesame seeds or chia seeds, for garnish

For the Sesame-Soy Vinaigrette Dressing:

  • 1/3 cup neutral-flavored cooking oil (i.e. vegetable oil, grapeseed oil, etc.)
  • 1/4 cup rice wine vinegar
  • 1 tablespoon honey (or agave, to make this vegan)
  • 2 teaspoons soy sauce
  • 1/4 teaspoon sesame oil
  • pinch of salt and black pepper

Happy 4th of July! As you head out on your travels this weekend, don’t forget to plan your contribution to the cookout! I’m crazy about this Independence Day Inspired appetizer – Grilled Blackberry, Strawberry, Basil and Brie Pizza Crisps. Yum! As far as preparation is concerned, it won’t take long plop these healthy pizza crisps down next to the grill master’s spread! One suggestion – be sure to pick a gluten free or whole wheat pizza dough as your base for the crisps! Altogether, this dish makes for a patriotic and yummy statement for your holiday celebration! Ingredients

  • 1/2 (about 1/2 a pound) recipe of your favorite pizza dough
  • 1/4 cup olive oil
  • 16 basil leaves, chopped + divided
  • 8-12 ounces brie, sliced
  • 1 1/2 cups strawberries, chopped
  • 3/4 cup blackberries
  • 1/2 teaspoon pepper
  • Balsamic Honey Glaze
  • 1/2 cup balsamic vinegar
  • 3 tablespoons honey

Roasted Red Pepper Hummus

Eating clean doesn’t mean cutting out snacks all together – although, it may look different than munching on a bag of potato chips. If you’ve never looked at the Ayurvedic way of eating, you will find that it’s a great alternative that allows you to take control of your health with a preventative approach. An Ayurvedic diet is healthy and entirely delicious – take this recipe for example. Prepare this Roasted Red Hummus dip in lieu of other classic snack options for your next party! It’s sure to be a treat. Once the dip is prepared, pair it with a selection of your favorite veggies. Enjoy!

Roasted Red Pepper Hummus

Ingredients:

  • 1 1/4 cup chickpeas, wash and soak in 3 cups water and a tsp of baking soda overnight
  • Sesame seeds – 1/4 cup
  • Olive oil – 5 tbsps
  • Red bell peppers – 2
  • Lemon juice – 4 tbsps
  • Garlic -2, roast in a tsp of olive oil and lighty crush
  • Cayenne pepper – 1/2 tsp (red chili powder or paprika can be used in its place)
  • Roasted cumin powder – 1/2 tsp
  • Roasted coriander powder – 1/2 tsp (optional)
  • Salt to taste

American Flag Fruit Kabobs

Fireworks and BBQ’s abound at the height of summer’s main event: Independence Day. A patriotic centered menu for the big day is a must and fun to plan! This dish will look lovely as a centerpiece and your kids will love to help with preparation. To represent the red, white and blue of Old Glory you’ll need strawberries, blueberries and bananas. You’ll also need some lemon juice for preserving the fruit and kabob sticks for displaying the fruit and for serving. Tip: be sure to slice strawberries in equal chunks, this helps for the aesthetic of the plate. Arrange the fruit according to the image below, and you’ll be well on your way to enjoying your patriotic treat! Eat up and enjoy the holiday!

Parmesan Garlic Zucchini Chips

With your garden in full bloom, it’s time to talk about recipes that will use this season’s harvest while it’s fresh! Zucchini is excellent served grilled or in a fresh salad, but this recipe is a true gem. Remember when you fell in love with snacking on kale chips? Well, this recipe applies similar preparation with an amped up parmesan garlic taste. Few ingredients and easy preparation allow this recipe to be prepared ahead as a snack for a busy schedule. Depending on the size of your garden, canning can be an excellent way to preserve your garden’s bounty throughout the year. Without much difficultly, you can store your extra veggies to use in dishes throughout the year!

Ingredients:

  • 1 lb (about 4 cups) thin sliced Zucchini
  • ⅛ tsp salt
  • 1 ounce of finely grated Parmesan cheese
  • 1 garlic clove finely grated or ⅛ tsp garlic powder
  • 1 tsp apple cider vinegar
