Chocolate Avocado Smoothie

Looking for something sweet AND healthy, but don’t have to deal with all the sugar or even have the time to make something? This smoothie is going to be the perfect breakfast alternative! Thank you to Betsy Carter – Concrete & Iron Fitness

Ingredients
  • 1-1/2 cups dairy free milk (almond, coconut or hemp)
  • 1 avocado (peeled and pitted)
  • 1 cup spinach
  • 1 tablespoon raw cocoa
  • 1 scoop vanilla protein powder
Directions
  1. Blend all ingredients in a Vitamix or powerful blender.
  2. If needed, add water to adjust thickness.
 
Notes
Betsy’s Tip: If this smoothie makes you feel cold, add 1/4 teaspoon of warming spice such as cinnamon, nutmeg, or clove. Or, have a hot cup of dandelion or chamomile tea with raw honey to warm your digestion.

Creamy Vegetarian White Chili

Ingredients

  • 1 Tbsp olive oil
  • 1 white onion, diced
  • 1 green bell pepper, diced small
  • 1 jalapeno, diced
  • 3 garlic cloves, minced
  • 1 Tbsp cumin
  • ¼ cup all-purpose flour
  • 4 cups low-sodium vegetable broth
  • 3 15-ounce cans Great Northern beans, drained and rinsed
  • 1 4-ounce can chopped green chilies
  • ¾ cup frozen corn
  • 2 cups warmed whole milk (use non-dairy if wanting to make the recipe vegan)
  • Salt / Pepper, to taste
  • Lime juice, to taste
  • garnish options: cilantro, avocado, tortilla chips, pickled jalapenos, radish slices, hot sauce

Chocolate Mint Avocado Cookies

In the spirit of the Season, we’ve been sharing our favorite Holiday Recipes! This week, we’ve picked the perfect recipe to bake for Holiday Cookie Exchanges. This month more than ever, it can be tempting to indulge in all the Holiday Sweets that surround you. With this recipe, you can have your sweets and share them too – each cookie is only 100 calories! Chocolate Mint Avocado Cookies

Ingredients:

For the Cookies:

  • 2 1/2 Cups Oat flour270g
  • 2 tsps Cornstarch
  • 1 1/2 tsp Baking soda
  • 1/2 tsp Salt
  • 2/3 Cup Avocado mashed (150g)
  • 3/4 Cup Raw Organic cane sugar
  • 1/4 Cup + 2 Tbsp Coconut sugar
  • 2 Large egg yolks
  • 1 1/2 tsps Pure vanilla extract

For the truffle filling:

  • 1/4 Cup + 2 Tbsp Avocado mashed (86g)
  • 1/2 Cup Semi-sweet chocolate chips
  • 4 Tbsp Unsweetened cocoa powder
  • 1/2 tsp Peppermint extract
  • 1/4 tsp Vanilla extract

Cajun Cauliflower with Cilantro Avocado Sauce

Let’s take a moment to appreciate Cauliflower. As the cousin of broccoli, cauliflower has a similar nutritional benefit. I’m also a fan of Cauliflower for its versatility. It works well as a substitute for some of my favorite carb-charged comfort foods – think mashed potatoes and pizza crust. Yum! I’m currently crazy about this recipe for Cajun Cauliflower with Cilantro Avocado sauce. Happy cooking and enjoy!

    • 1 head cauliflower
    • 2 teaspoons cajun seasoning, divided (store-bought or homemade)
    • 3 tablespoons olive oil, divided
    • Water for steaming
    • 1 cup cooked brown rice, for serving
    Cilantro Avocado Sauce
    • 1/2 cup whole raw cashews
    • 1/2 ripe avocado
    • 1/2 cup cilantro
    • 2 tablespoons lime juice
    • 1/4 teaspoon salt
    • 1/4 teaspoon powdered garlic
    • 1 1/2 to 2 cups water, divided

Pomegranate and Pistachio Relish on Avocado Toast

Ingredients

For the relish:

  • 1 1/2 cups pomegranate seeds (from 1 large pomegranate)
  • 1/2 cup diced red onion
  • 1/2 cup pistachios, lightly toasted
  • 1/4-1/2 cup parsley, diced
  • 1 clove of garlic, minced
  • 1/4 teaspoon ground allspice
  • 1 1/2 teaspoons white wine vinegar
  • 3 teaspoons pomegranate molasses
  • 1/4 cup extra virgin olive oil
  • pinch of fine sea salt

For the toast:

  • 1 loaf of rustic style bread, sliced into 1 inch thick pieces
  • 1 large avocado
  • pinch of fine sea salt

Blackened Chicken Fiesta

With the end of summer in sight, I’ve been looking forward to all that there is to love about Autumn. Warm soups, savory squash dishes and pumpkin infusions – I can’t wait! However, with these last few days of Summer, it’s time to turn up the volume on your kitchen inspiration. Try this Blackened Chicken Fiesta dish to spice up your afternoon. Happy Cooking and Enjoy!

Blackened Chicken Fiesta

Ingredients:

For the Fiesta Salad:

  • 2 cloves garlic, minced
  • 3 tbsp fresh lime juice
  • 1 teaspoon extra virgin olive
  • 1 tsp cumin
  • pinch crushed red pepper flakes
  • 1/2 teaspoon kosher salt
  • 15 oz can chickpeas, rinsed and drained
  • 1 cup fresh cooked corn (from 1 large ear)
  • 1 cup cherry tomatoes, quartered
  • 1/4 cup minced red onion, finely diced
  • 1/4 cup cilantro, chopped
  • 4 oz diced avocado (1 small haas)

For the chicken:

  • 4 boneless, skinless chicken breasts
  • olive oil spray
  • 2 teaspoons paprika
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cumin
  • 1 teaspoon ground thyme
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder

Summer Corn, Tomato and Avocado Salad with Creamy Buttermilk-Dijon Dressing

With school back in session for many, it’s easy to let the dinner menu take the back-burner. My advice? Take advantage of that fresh summer produce while you still can! Toss together a yummy salad for a quick and easy way to deliver a nutritious meal to the whole family. Mix together this Summer Corn, Tomato and Avocado Salad with Creamy Buttermilk-Dijon Dressing for a meal that’s easy and delicious. Enjoy and happy cooking!

Summer Corn, Tomato and Avocado Salad with Buttermilk-Dijon Dressing

Ingredients

For the Dressing:

  • 1 tbsp minced shallots
  • 2 teaspoons Dijon mustard 
  • 2 tbsp white wine vinegar
  • 6 tbsp 1% buttermilk
  • 2 tbsp extra virgin olive oil
  • 1/4 tsp garlic powder
  • 1/2 teaspoon kosher salt
  • pinch black pepper

For the Salad: 

  • 1 head romaine, chopped (about 5 cups)
  • 1 medium corn on the cobb, cooked and cut off husk*
  • 4 to 5 large grape tomatoes, quartered
  • 1/2 large avocado (3 oz), sliced
  • 1/4 cup sliced red onion
