Ginger Basil Limeade

I am actually super excited to share this drink, I have loved limeade for as long as I can remember. Not only that but the ginger and basil in this drink gives it a unique but thirst quenching and delicious taste. Enjoy, I know I did!

“Ginger limeade strengthens your digestive fire. Add a pinch of salt (or better yet, salt the rims of a fancy glass) and you have a perfect, late afternoon pick-me-up alternative to coffee. This recipe benefits a wide range of constitutions, is delicious and easy to digest. Ingredients
  • 1/2 cup Basil
  • 2 inch Ginger (Fresh)
  • 1 whole Lime
  • 2 tsp Raw Sugar
 
Directions
  1. Use a fine grater to make about 1 teaspoon of lime zest. Juice limes.
  2. Chop ginger into chunks.
  3. Add 1/4 water to a blender with ginger, lime juice, lime zest, raw sugar and a small handful of fresh basil leaves. Blend until smooth.
  4. Combine ginger-lime juice with 8 cups of water in a pitcher. Garnish with fresh basil.
  5. Chill to serve.
  6. Salt the rim of your glasses to complete this mock-tail while satisfying all six tastes!

Superfood Quinoa Bowl

Ingredients

For the Bowl:

  • 6 cups cooked quinoa
  • 1 medium head of broccoli, florets removed and chopped into bite-sized pieces
  • 2 cups frozen shelled edamame
  • 4 cups chopped kale
  • 1 avocado, peeled, pitted and sliced
  • 1/2 cup Blue Diamond Almonds
  • 1 batch Sesame-Soy Vinaigrette (see below)
  • toasted sesame seeds or chia seeds, for garnish

For the Sesame-Soy Vinaigrette Dressing:

  • 1/3 cup neutral-flavored cooking oil (i.e. vegetable oil, grapeseed oil, etc.)
  • 1/4 cup rice wine vinegar
  • 1 tablespoon honey (or agave, to make this vegan)
  • 2 teaspoons soy sauce
  • 1/4 teaspoon sesame oil
  • pinch of salt and black pepper

Happy and Healthy July 4th! Grilled Blackberry, Strawberry, Basil and Brie Crisps

Happy 4th of July! As you head out on your travels this weekend, don’t forget to plan your contribution to the cookout! I’m crazy about this Independence Day Inspired appetizer – Grilled Blackberry, Strawberry, Basil and Brie Pizza Crisps. Yum! As far as preparation is concerned, it won’t take long plop these healthy pizza crisps down next to the grill master’s spread! One suggestion – be sure to pick a gluten free or whole wheat pizza dough as your base for the crisps! Altogether, this dish makes for a patriotic and yummy statement for your holiday celebration! Grilled Blackberry, Strawberry, Basil and Brie Crisps

Ingredients

  • 1/2 (about 1/2 a pound) recipe of your favorite pizza dough
  • 1/4 cup olive oil
  • 16 basil leaves, chopped + divided
  • 8-12 ounces brie, sliced
  • 1 1/2 cups strawberries, chopped
  • 3/4 cup blackberries
  • 1/2 teaspoon pepper
  • Balsamic Honey Glaze
  • 1/2 cup balsamic vinegar
  • 3 tablespoons honey

Basil and Mint Squash Noodles

As a pasta fanatic, I’m always seeking a grain-free alternative to swap out in place of my noodles! If you’ve never tried squash noodles before, you’re in for a treat. This dish is ideal for spring afternoons or even a Meatless Monday fix. In all, Squash Noodles are a fresh and fun way to enjoy your veggies – sans grains. Happy Cooking and Enjoy!

Grain-Free Basil and Mint Summer Squash “Noodles”

Ingredients

  • 3 large yellow summer squash, cut into thin strands with a vegetable peeler or spiral slicer (spiralizer) orjulienned
  • 1 large celery stalk, thinly sliced
  • 1 tablespoon finely chopped fresh basil
  • 2 teaspoons extra-virgin olive oil
  • 2 teaspoons freshly squeezed lemon juice1 teaspoon
  • finely chopped fresh mint
  • 1⁄2 teaspoon freshly grated lemon zest
  • 1⁄4 teaspoon ground cumin
  • Pinch crushed red pepper flakes
  • Sea salt and freshly ground black pepper, to taste

Directions

In a large bowl, combine all the ingredients, toss to coat, and serve.
