Healthy Hoppin’ John

Now that is one heck of a name, if that doesn’t catch your attention then I don’t know what would! This is a super simple, but delicious on the go. Best part is meal prep my friends. Special thanks to Lindsay Ford at Skyterra Weight Loss Spa!

Ingredients
  • 1 tablespoon extra-virgin olive oil
  • 1 medium onion, chopped
  • 1 small red bell pepper, chopped
  • 2 stalks of celery, chopped
  • 2 gloves garlic, minced
  • 1 14-ounce can vegetable broth
  • 1 cup quick-cooking barley
  • 1 tablespoon chopped fresh thyme or 1 teaspoon dried
  • 2 teaspoons crushed red pepper
  • 1/4 teaspoon salt
  • 2 15-ounce cans black eyed peas, rinsed
Directions
  1. Heat oil in a large nonstick skillet over medium heat.
  2. Add onion, bell pepper and celery. Cook until the vegetables soften, 3 to 4 minutes.
  3. Add garlic and cook 1 minute.
  4. Add broth, barley, thyme, lemon juice, crushed red pepper and salt; bring to a boil.
  5. Reduce heat, cover and simmer until the barley is done, 15 to 20 minutes.
  6. Remove from the heat and stir in black-eyed peas. Cover and let stand for 5 minutes. Serve hot.
  7. If desired serve with sautéed collard greens.

Grilled Ahi Tuna with Caramelized Pineapple Salsa

Need a vacation? Well it is not exactly a trip to the beach, but thanks to Red Mountain Resort you can have a little tropical in your own home. Hope you enjoy it as much as I did!

Ingredients for the tuna

  • ‍4 -four oz. pieces of Ahi tuna
  • Cajun spice (see recipe)
  • 1 cup pineapple, diced small
  • 1/4 cup pineapple juice
  • 2 Tbsp. red bell pepper, diced small
  • 1 Tbsp. red onion, diced small
  • 1 Tbsp. fresh basil, minced
  • 2 medium roma tomatoes, seeded & diced

Cajun seasoning ingredients

  • ‍1 Tbsp. white pepper
  • 1 Tbsp. black pepper
  • 1 Tbsp. cayenne pepper
  • 1 Tbsp. granulated garlic
  • 1 Tbsp. oregano
  • 2 Tbsp. paprika
  • 1 Tbsp. salt

Directions

  1. ‍Pre-heat a heavy gauge (thick bottomed) sauté pan for about 1-2 minutes.
  2. Pre-heat a grill. (A cast iron skillet can be substituted if you don’t have a grill.)
  3. Add diced pineapple to the sauté pan. It should shriek a little when it hits the pan.
  4. Let the pineapple caramelize on one side before stirring (about 30-45 seconds).
  5. Continue sautéing until the pineapple is charred on the outside.
  6. Add the pineapple juice to deglaze the bottom of the pan, and reduce.
  7. In a small mixing bowl, combine the pineapple, diced red bell peppers, diced red onion, basil and tomatoes. Reserve for service.
  8. Lightly coat the Ahi tuna with Cajun spice. Place on a hot grill (or in a cast iron skillet) and cook until aroma from the Cajun spice is released – about 60 seconds per side, depending on heat. The suggested serving temperature for Ahi is rare to medium rare.
  9. Remove the Ahi from the grill, plate up with your favorite rice dish, and top with pineapple salsa.

Shrimp Tacos

Cooking for the family is a balance between crowd-pleasing and healthy choices. Today, we are featuring a recipe from Chef Jen that accomplishes both! Shrimp Tacos

Number of servings:

Nutrition Analysis per serving: 233 calories, 6g fat, 2g saturated fat, 15g protein, 34g carbohydrates, 6g sugar, 6g fiber, 566mg sodium

You will need: chef’s knife, cutting board, medium saute pan, potato masher, medium nonstick pan, spatula

Ingredients:

  • 1 cup romaine lettuce

  • 1 cup pineapple

  • 2 Roma tomatoes

  • 4 green onions

  • 2 tablespoons cilantro

  • 2 teaspoons garlic

  • 1 cup black beans

  • 1 teaspoon cumin

  • 1 teaspoon tabasco or hot sauce

  • 2 teaspoons olive oil

  • 8 ounces 21/25 shrimp, peeled and deveined 

  • 1 lime, juiced

  • ½ teaspoon kosher salt

  • 4 (4-inch) corn tortillas

  • ¼ cup feta cheese

Preparation:

  • Shred the lettuce. Chop the pineapple, tomatoes, cilantro, and green onions. Mince the garlic.
  •  In a medium saute pan, combine the black beans, cumin, and tabasco. Mash with a potato masher.
  • Heat a medium nonstick pan to medium high heat; add oil. Once pan is very hot, add shrimp. Then add cilantro, garlic, lime, and salt. Cook until shrimp is bright red.
  • Place ¼ cup of black beans on each tortilla. Top with shrimp, lettuce, pineapple, tomatoes, green onions, cilantro, and cheese.

Fall Harvest Quinoa Salad

Meet your new favorite fall salad. With hearty greens and quinoa as a base, this salad wows tastebuds with a yummy Turmeric Tahini dressing. Pack it to go or enjoy it with a fall soup of your choice! Either way, you are in for a treat with this recipe! Happy cooking and enjoy!

Ingredients

  • 1 cup uncooked quinoa
  • 1 delicata or acorn squash, halved, seeded + cut into half circles
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 1/2 teaspoon McCormick Ground Cinnamon
  • pinch of McCormick Ground Cayenne Red Pepper, to taste
  • kosher salt + pepper
  • 1 1/2 cups baby kale
  • 1 apple, cored + thinly sliced
  • arils from 1 pomegranate
  • 1/4 cup toasted pumpkin seeds or roasted pistachios
  • 8 ounces halloumi cheese, sliced (omit if vegan)
  • 1 avocado, sliced
  • Turmeric Tahini Dressing
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons olive oil
  • 1/2 teaspoon
  • kosher salt + pepper

Creamy Thai Carrot Sweet Potato Soup

Happy first week of Fall! Nothing will put you in the mood for all things fall more than a creamy soup – try this heart-warming Creamy Thai Carrot Sweet Potato Soup. This Thai style recipe uses fresh, seasonal ingredients that you can find at your local farmer’s market. Happy Harvest! Enjoy!

Creamy Thai Carrot Sweet Potato Soup

Ingredients

  • 1 tablespoon (15 mL) virgin coconut oil
  • 2 cups (500 mL) diced sweet onion
  • 2 cloves garlic, minced
  • 1 tablespoon (15 mL) minced fresh ginger
  • 2 tablespoons (30 mL) red curry paste
  • 4 cups (1 L) low-sodium vegetable broth, plus more if needed
  • 1/4 cup (60 mL) raw almond butter
  • 3 cups (750 mL) diced peeled carrots (1/2-inch/1 cm dice)
  • 3 cups (750 mL) diced peeled sweet potatoes (1/2-inch/1 cm dice)
  • 1/2 teaspoon (2 mL) fine sea salt, plus more to taste
  • 1/4 teaspoon (1 mL) cayenne pepper (optional)
  • Freshly ground black pepper
  • minced fresh cilantro, for serving
  • lime juice, for serving

Roasted Tamari Almonds:

  • 1/2 cup (125 mL) raw almonds, finely chopped
  • 1 tablespoon plus 1 teaspoon (20 mL) low-sodium tamari or coconut aminos

Cajun Cauliflower with Cilantro Avocado Sauce

Let’s take a moment to appreciate Cauliflower. As the cousin of broccoli, cauliflower has a similar nutritional benefit. I’m also a fan of Cauliflower for its versatility. It works well as a substitute for some of my favorite carb-charged comfort foods – think mashed potatoes and pizza crust. Yum! I’m currently crazy about this recipe for Cajun Cauliflower with Cilantro Avocado sauce. Happy cooking and enjoy!

Ingredients

    • 1 head cauliflower
    • 2 teaspoons cajun seasoning, divided (store-bought or homemade)
    • 3 tablespoons olive oil, divided
    • Water for steaming
    • 1 cup cooked brown rice, for serving
    Cilantro Avocado Sauce
    • 1/2 cup whole raw cashews
    • 1/2 ripe avocado
    • 1/2 cup cilantro
    • 2 tablespoons lime juice
    • 1/4 teaspoon salt
    • 1/4 teaspoon powdered garlic
    • 1 1/2 to 2 cups water, divided

Ingredients

For the relish:

  • 1 1/2 cups pomegranate seeds (from 1 large pomegranate)
  • 1/2 cup diced red onion
  • 1/2 cup pistachios, lightly toasted
  • 1/4-1/2 cup parsley, diced
  • 1 clove of garlic, minced
  • 1/4 teaspoon ground allspice
  • 1 1/2 teaspoons white wine vinegar
  • 3 teaspoons pomegranate molasses
  • 1/4 cup extra virgin olive oil
  • pinch of fine sea salt

For the toast:

  • 1 loaf of rustic style bread, sliced into 1 inch thick pieces
  • 1 large avocado
  • pinch of fine sea salt
