Grilled Turkey Tacos

Turkey is an excellent alternative for eating beef. To be completely honest there is not much of a difference between the taste of either of them. So why not go with the healthier alternative? Courtesy of: Ontario Turkey.

“This is a very satisfying turkey based taco, with enough density of high quality calories and flavors to make a complete meal at lunch or dinner.  Some of the healthy fats come from the nutrient rich avocado.  You can reduce the carbs and fat grams by using lettuce leaves in place of the grilled tortillas, or, use lower or fat free tortillas.”

Ingredients
  • 1 teaspoon (5mL) each, ground cumin, oregano and chili powder
  • 1/4 teaspoon (1mL) sea salt
  • 3 tablespoon (45mL) olive oil
  • 1/4 cup (50mL) fresh chopped cilantro
  • 1 lb (500g) boneless, skinless Ontario turkey fillets
  • 1/2 small red onion, sliced
  • 2 carrots, peeled and thinly sliced
  • 2 jalapenos, sliced (ribs and seeds removed)
  • 2 tablespoons (25mL) cider vinegar
  • 1 teaspoon (5mL) sugar
  • 1/4 teaspoon (1mL) salt
  • 2 cups (500mL) shredded cabbage
  • 8 6-inch (15cm) flour tortillas
  • Garnishes: sprigs of cilantro, lime wedges, avocado slices
 
Directions
  1. In resealable bag, combine cumin, oregano, chili powder, salt, olive oil and cilantro, rubbing to make a paste.
  2. Add turkey fillets and shake to thoroughly coat turkey. Let sit for 30 minutes and up to one day.
  3. In another bag, combine red onion, carrots, jalapenos, vinegar, sugar and salt. Let sit at room temperature for at least 30 minutes and up to one day, tossing occasionally.
  4. Grill turkey over medium high heat until browned and cooked through, about 5 minutes per side. Transfer to cutting board and let rest for 5 minutes before slicing.
  5. Toss carrot mixture with cabbage. Divide turkey and cabbage mixture over warm grilled tortillas. Garnish with cilantro and avocado and serve with lime wedges and coarse salt.

Grilled Vegetables and Marinade

Here is a good side dish that you can just throw on the grill, goes great with grilled chicken! Thanks to Red Mountain Resort for this recipe.

Directions

  1. Cut the zucchini, yellow squash, and roma tomatoes.
  2. Add to the marinade, mixing to coat thoroughly.
  3. Roast the garlic and shallots, cool, then chop coarsely.
  4. Grill the squash and tomatoes on a broiler, cool on a sheet pan, then cut on a bias.
  5. Combine with the garlic and shallots.

Superfood Quinoa Bowl

Ingredients

For the Bowl:

  • 6 cups cooked quinoa
  • 1 medium head of broccoli, florets removed and chopped into bite-sized pieces
  • 2 cups frozen shelled edamame
  • 4 cups chopped kale
  • 1 avocado, peeled, pitted and sliced
  • 1/2 cup Blue Diamond Almonds
  • 1 batch Sesame-Soy Vinaigrette (see below)
  • toasted sesame seeds or chia seeds, for garnish

For the Sesame-Soy Vinaigrette Dressing:

  • 1/3 cup neutral-flavored cooking oil (i.e. vegetable oil, grapeseed oil, etc.)
  • 1/4 cup rice wine vinegar
  • 1 tablespoon honey (or agave, to make this vegan)
  • 2 teaspoons soy sauce
  • 1/4 teaspoon sesame oil
  • pinch of salt and black pepper

Happy and Healthy July 4th! Grilled Blackberry, Strawberry, Basil and Brie Crisps

Happy 4th of July! As you head out on your travels this weekend, don’t forget to plan your contribution to the cookout! I’m crazy about this Independence Day Inspired appetizer – Grilled Blackberry, Strawberry, Basil and Brie Pizza Crisps. Yum! As far as preparation is concerned, it won’t take long plop these healthy pizza crisps down next to the grill master’s spread! One suggestion – be sure to pick a gluten free or whole wheat pizza dough as your base for the crisps! Altogether, this dish makes for a patriotic and yummy statement for your holiday celebration!   • 1/4 cup olive oil
  • 16 basil leaves, chopped + divided
  • 8-12 ounces brie, sliced
  • 1 1/2 cups strawberries, chopped
  • 3/4 cup blackberries
  • 1/2 teaspoon pepper
  • Balsamic Honey Glaze
  • 1/2 cup balsamic vinegar
  • 3 tablespoons honey

Bruschetta Chicken

Eating healthy doesn’t mean eating blandly, it’s all about embracing a variety of flavors. I’m always looking for healthy takes on dinner that don’t sacrifice taste! The more you experiment with recipes, the more you’ll find that you can take a concept from a favorite dish and redo it in a new way. It’s not a secret that I love bruschetta, so when I saw this recipe I knew that it was a must to make. Using tomatoes from the garden gave this dish an extra boost of that fresh taste that I love. When preparing the chicken, you may choose to grill or bake in the oven depending on your time allotment and your preferences. Enjoy and happy cooking!

Skinny Bruschetta Chicken

Ingredients

  • 3 or 4 chicken breasts
  • 4 or 5 small tomatoes, chopped
  • 1 clove garlic, minced
  • 1/2 small red onion, chopped
  • 1 tsp. olive oil
  • 1 tsp. balsamic vinegar
  • 1/8. tsp sea salt
  • Handful basil, chopped
