Blackened Chicken Fiesta

With the end of summer in sight, I’ve been looking forward to all that there is to love about Autumn. Warm soups, savory squash dishes and pumpkin infusions – I can’t wait! However, with these last few days of Summer, it’s time to turn up the volume on your kitchen inspiration. Try this Blackened Chicken Fiesta dish to spice up your afternoon. Happy Cooking and Enjoy!


Blackened Chicken Fiesta


For the Fiesta Salad:

  • 2 cloves garlic, minced
  • 3 tbsp fresh lime juice
  • 1 teaspoon extra virgin olive
  • 1 tsp cumin
  • pinch crushed red pepper flakes
  • 1/2 teaspoon kosher salt
  • 15 oz can chickpeas, rinsed and drained
  • 1 cup fresh cooked corn (from 1 large ear)
  • 1 cup cherry tomatoes, quartered
  • 1/4 cup minced red onion, finely diced
  • 1/4 cup cilantro, chopped
  • 4 oz diced avocado (1 small haas)

For the chicken:

  • 4 boneless, skinless chicken breasts
  • olive oil spray
  • 2 teaspoons paprika
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cumin
  • 1 teaspoon ground thyme
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder

Vegetarian Pineapple Black Bean Tostadas

It’s time to freshen up with a Recipe Redo that’s ready to take on Spring dinner plans! I’m always searching for recipes to tuck away in my recipe box when I’m in a pinch. This one fits the bill with an easy 10 min. prep time. This recipe is just about as easy as a healthy dinner can get – and it’s a crowd pleaser too. Love Tostadas? This one’s for you, too! This weekend, try this recipe for 10-minute Pineapple Black Bean Tostadas. My favorite part? The simple Pineapple Salsa that stacks on last. Yum! Happy Cooking!


Pineapple Black Bean Tostadas


For the Tostada:

  • 1 (12-count) package Tostada Shells
  • 2 (16-ounce) cans Refried Beans
  • 2 ripe avocados, peeled, pitted and sliced
  • 1 batch pineapple salsa
  • crumbled queso fresco

For the Pineapple Salsa: 

  • 2 cups diced fresh pineapple
  • ⅔ cup loosely-packed chopped fresh cilantro
  • ½ cup diced red onion
  • 1 small jalapeno, seeded and finely-chopped
  • 2 tablespoons fresh lime juice
  • ¼ teaspoon ground cumin
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper

Chilled Summer Strawberry Coconut Soup

The arrival of mid-July means that humid and hazy days have once again become the norm. Cool off with a bowl of Strawberry Coconut soup! It’s so luxuriously delicious that it could almost be served as a dessert. This recipe is healthy and excellent way to use those ripe and juicy strawberries you just purchased from your local Farmer’s Market! As an added bonus, you’ll only need 5 minutes and a blender on hand to prepare. Simply add all the ingredients listed below in your blender and your soup is practically finished! Depending on how thick or thin you prefer your soup, blend in extra yogurt to add thickness to the soup or more orange juice to make thin it out a bit. The soup can be served immediately after it is blended set it in the fridge for about 2 hours to chill. Enjoy and happy cooking!


Chilled Strawberry Coconut Soup


  • 2 pounds strawberries (approx. 2 3/4 pints)
  • 1 cup vanilla yogurt
  • 1/2 cup orange juice
  • 1 tablespoon lemon juice
  • 3 -4 tablespoons sugar
  • 1/3 -1/2 cup coconut cream from can of full fat coconut milk* (optional)
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cinnamon

Garnish (Optional)

  • mint
  • orange zest
  • whipped cream
