Cinnamon Banana Chips

How does that name not sound appealing? Besides the name the best part is there is only 3 ingredients in it, and 2 of them are in the name of the recipe! There is an aha moment for you. Thank you spaindex.com for this gem!

Steer clear of purchased banana chips which are usually coated in sugar (for a fruit already sweet on its own!) and preservatives.  Instead, try this simple recipe for Cinnamon Banana Chips.  They are great way to satisfy sweet and crunchy cravings at the same time.  Bananas pack an energy punch and sustain your blood sugar, and they are officially recognized by the FDA for being high in potassium and low in salt,  which helps to lower blood pressure and protect against heart attack and stroke.

 

Ingredients
  • 3 bananas
  • 1 lemon, juiced
  • 1 teaspoon cinnamon
Method
  1. Preheat oven to 200 degrees F
  2. Slice bananas thinly and arrange on a parchment lined baking sheet
  3. Drizzle banana slices with lemon juice and sprinkle with cinnamon
  4. Bake for approximately 1 hour, checking frequently for crispness. Remove when chips are crisp, which may take less than or more than 1 hour depending on your oven

Cajun Cauliflower with Cilantro Avocado Sauce

Let’s take a moment to appreciate Cauliflower. As the cousin of broccoli, cauliflower has a similar nutritional benefit. I’m also a fan of Cauliflower for its versatility. It works well as a substitute for some of my favorite carb-charged comfort foods – think mashed potatoes and pizza crust. Yum! I’m currently crazy about this recipe for Cajun Cauliflower with Cilantro Avocado sauce. Happy cooking and enjoy!

    • 1 head cauliflower
    • 2 teaspoons cajun seasoning, divided (store-bought or homemade)
    • 3 tablespoons olive oil, divided
    • Water for steaming
    • 1 cup cooked brown rice, for serving
    Cilantro Avocado Sauce
    • 1/2 cup whole raw cashews
    • 1/2 ripe avocado
    • 1/2 cup cilantro
    • 2 tablespoons lime juice
    • 1/4 teaspoon salt
    • 1/4 teaspoon powdered garlic
    • 1 1/2 to 2 cups water, divided

For the relish:

  • 1 1/2 cups pomegranate seeds (from 1 large pomegranate)
  • 1/2 cup diced red onion
  • 1/2 cup pistachios, lightly toasted
  • 1/4-1/2 cup parsley, diced
  • 1 clove of garlic, minced
  • 1/4 teaspoon ground allspice
  • 1 1/2 teaspoons white wine vinegar
  • 3 teaspoons pomegranate molasses
  • 1/4 cup extra virgin olive oil
  • pinch of fine sea salt

For the toast:

  • 1 loaf of rustic style bread, sliced into 1 inch thick pieces
  • 1 large avocado

Crispy Apple and Kohlrabi Salad

On my quest to find healthy and wholesome foods, I love to try new veggies. This yummy fall salad features Kohlrabi – a knobby veggie shaped like a turnip. Kohlrabi is known to improve your digestive and immune system, encourage weight loss, strengthen bones and improve vision health, among many other benefits. So, how exactly do you prepare this superfood? You can eat it raw, steamed or baked. Today, we will prepare it raw and pair it with some lovely crisp September apples and Tarragon leaves. Crispy Apple & Kohlrabi Salad

Ingredients

  • 2 small kohlrabi (about 1 pound, I used the green variety but purple would be prettier), cut into matchsticks about ¼” wide
  • 1 large Honeycrisp apple (about ½ pound), cored and cut into matchsticks about ¼” wide
  • ⅓ cup grated gouda cheese (optional, not shown)
  • ¼ cup fresh tarragon leaves
  • 3 tablespoons toasted sunflower seeds*
  • Lemon zest, to taste
  • 1 to 2 tablespoons olive oil, to taste
  • 1 to 2 tablespoons lemon juice, to taste
  • Flaky sea salt (like Maldon) and freshly ground black pepper, to taste

Blackened Chicken Fiesta

With the end of summer in sight, I’ve been looking forward to all that there is to love about Autumn. Warm soups, savory squash dishes and pumpkin infusions – I can’t wait! Ingredients:

For the Fiesta Salad:

  • 2 cloves garlic, minced
  • 3 tbsp fresh lime juice
  • 1 teaspoon extra virgin olive
  • 1 tsp cumin
  • pinch crushed red pepper flakes
  • 1/2 teaspoon kosher salt
  • 15 oz can chickpeas, rinsed and drained
  • 1 cup fresh cooked corn (from 1 large ear)
  • 1 cup cherry tomatoes, quartered
  • 1/4 cup minced red onion, finely diced
  • 1/4 cup cilantro, chopped
  • 4 oz diced avocado (1 small haas)

For the chicken:

  • 4 boneless, skinless chicken breasts
  • olive oil spray
  • 2 teaspoons paprika
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cumin
  • 1 teaspoon ground thyme
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder
