Mango Lemon Balm Pops

This is the second post of my personal favorite DIY popsicles, you can of course use any fruit that you like. There is just something so appealing about lemon and mango being put together into a delicious treat. Thank you once again to Lake Austin Spa Resort.

Ingredients
  • 1 cup fresh squeezed orange or pineapple juice
  • Several pieces of fresh lemon verbena and lemon balm
  • 1 large ripe mango, peeled and diced or 2 cups frozen mango chunks
 Directions
  1. Crush the herbs and stir into the juice and refrigerate overnight.
  2. Strain and discard the herbs and add the mango pieces in a blender container.
  3. Blend ingredients until smooth and pour into molds. Freeze overnight.
Notes
Substitute persimmon pulp, guava or banana for the mango for a different tropical flavor.

Finding a quick and easy solution for tonight’s dinner menu may be as simple as looking at the existing items in your inventory. It is often said that simplicity is best; I certainly find this to be a profound truth when cooking is involved. What I love most about this recipe is that it requires so little preparation. It truly is as simple as coating the chicken with flour and seasoning and sautéing everything up to heavenly perfection. Once the chicken has reached a golden-brown state, put it on display on a lovely platter and enjoy the fruits of your not-so-much labor.

5 Ingredient Lemon Chicken With Asparagus

Ingredients: (3-4 Servings)

  • 1 lb. boneless skinless chicken breasts
  • ¼ cup whole wheat flour (all purpose will work, too)
  • ½ teaspoon salt
  • 2 tablespoons butter
  • 1 teaspoon lemon pepper seasoning
  • 1 cup chopped asparagus
  • 2 lemons, sliced
