Spicy Kale with White Beans and Garlic

Courtesy to this recent website I have discovered this fabulous recipe and it is called Spa Index. That’t it, spa index. Can you believe how simple that name is? What’s even better is the recipes on there, this one in particular. ENJOY!

This quick and flexible vegetarian Spicy Kale with White Beans and Garlic serves just you or entire family! Garlic and Parmesan cheese provide savory flavors and balance the bitterness of Kale. Beans provide a source of protein. Vinegar, kale, and red pepper flakes all help in to digest the heaviness of beans. Although processed food is contraindicated in Ayurveda, we find canned beans easier to digest.

Ingredients
  • 1 tsp Balsamic Vinegar
  • 1/2 clove Garlic (raw)
  • 1 lbs Kale
  • 2 tbsp Olive Oil
  • 2 tbsp Parmesan Cheese
  • 1/2 tsp Red Pepper Flakes (Chili)
  • 1/2 tsp Salt (Mineral Salt)
  • 1 cup White Navy Beans, from canned, drained
Directions
  1. Steam Kale until soft in a small amount of water, watching carefully to avoid burning the kale.
  2. In a separate pan, sautee garlic in olive oil.
  3. Once the garlic is roasted add white beans and kale.
  4. Continue heating until beans are thoroughly hot. Remove from heat.
  5. Add red pepper flakes to taste, garnish with Parmesan cheese and a drizzle of vinegar and salt if desired.
  6. Continue to heat through until nice and hot.
  7. Serve in a bowl with an additional sprinkle of Parmesan cheese and toasty croutons on top for crunch.

Creamy Vegetarian White Chili

Ingredients

  • 1 Tbsp olive oil
  • 1 white onion, diced
  • 1 green bell pepper, diced small
  • 1 jalapeno, diced
  • 3 garlic cloves, minced
  • 1 Tbsp cumin
  • ¼ cup all-purpose flour
  • 4 cups low-sodium vegetable broth
  • 3 15-ounce cans Great Northern beans, drained and rinsed
  • 1 4-ounce can chopped green chilies
  • ¾ cup frozen corn
  • 2 cups warmed whole milk (use non-dairy if wanting to make the recipe vegan)
  • Salt / Pepper, to taste
  • Lime juice, to taste
  • garnish options: cilantro, avocado, tortilla chips, pickled jalapenos, radish slices, hot sauce

Power Food Fruit Smoothies

Here’s to 2017! What changes do you plan to make in the next year? Some of the best advice I’ve received is to focus on changing my daily habits. Over time, these daily changes will add up to a lifestyle change! This said, a great way to make an attainable change is to start the year off with healthy choices. For you, this may look like replacing your grab and go granola bar in the mornings with a  power food filled Fruit Smoothie. Half Baked Harvest has compiled an excellent guide to smoothie making that will jumpstart your resolutions. Happy New Year!

Strawberry Acai Smoothie

Ingredients

  • 1/2 red beet (1 small), peeled and roughly chopped (or grated if you have a weak blender)
  • 1 cup frozen (or fresh) strawberries
  • 1/2 cup frozen (or fresh) raspberries
  • 1 ripe fresh (or frozen) banana
  • 1 teaspoon acai berry powder*
  • 1 teaspoon vanilla
  • pinch of salt
  • 1 cup milk of choice (I use coconut, almond or goat milk)
  • 1/2 cup plain Greek yogurt (use coconut yogurt if vegan)
  • 1 tablespoon dried goji berries (optional)

Optional Toppings:

  • plain Greek yogurt
  • bee pollen, chia seeds, hemp seeds or ground flax
  • granola
  • fresh fruit and or goji berries
  • almond butter or other nut butter

Gingerbread Granola

Gingerbread Granola

Ingredients

  • 3 1/4 cups rolled oats (GF for gluten free eaters)
  • 1 3/4 cups raw nuts (I used almonds, pecans and a few walnuts)
  • 3 Tbsp organic cane sugar (or sub extra molasses or maple syrup mixed in with wet ingredients)
  • 1/4 tsp sea salt
  • 1/2 Tbsp ground cinnamon
  • 3/4 tsp ground ginger
  • pinch ground cloves (optional)
  • 1/4 cup coconut or olive oil
  • 1/3 cup maple syrup (sub agave, or honey if not vegan)
  • 2 Tbsp molasses
  • (optional) 1 tsp. vanilla extract

Chocolate Mint Avocado Cookies

In the spirit of the Season, we’ve been sharing our favorite Holiday Recipes! This week, we’ve picked the perfect recipe to bake for Holiday Cookie Exchanges. This month more than ever, it can be tempting to indulge in all the Holiday Sweets that surround you. With this recipe, you can have your sweets and share them too – each cookie is only 100 calories! Chocolate Mint Avocado Cookies

Ingredients:

For the Cookies:

  • 2 1/2 Cups Oat flour270g
  • 2 tsps Cornstarch
  • 1 1/2 tsp Baking soda
  • 1/2 tsp Salt
  • 2/3 Cup Avocado mashed (150g)
  • 3/4 Cup Raw Organic cane sugar
  • 1/4 Cup + 2 Tbsp Coconut sugar
  • 2 Large egg yolks
  • 1 1/2 tsps Pure vanilla extract

For the truffle filling:

  • 1/4 Cup + 2 Tbsp Avocado mashed (86g)
  • 1/2 Cup Semi-sweet chocolate chips
  • 4 Tbsp Unsweetened cocoa powder
  • 1/2 tsp Peppermint extract
  • 1/4 tsp Vanilla extract

Shrimp Tacos

Cooking for the family is a balance between crowd-pleasing and healthy choices. Today, we are featuring a recipe from Chef Jen that accomplishes both! Shrimp Tacos

Number of servings:

Nutrition Analysis per serving: 233 calories, 6g fat, 2g saturated fat, 15g protein, 34g carbohydrates, 6g sugar, 6g fiber, 566mg sodium

You will need: chef’s knife, cutting board, medium saute pan, potato masher, medium nonstick pan, spatula

Ingredients:

  • 1 cup romaine lettuce

  • 1 cup pineapple

  • 2 Roma tomatoes

  • 4 green onions

  • 2 tablespoons cilantro

  • 2 teaspoons garlic

  • 1 cup black beans

  • 1 teaspoon cumin

  • 1 teaspoon tabasco or hot sauce

  • 2 teaspoons olive oil

  • 8 ounces 21/25 shrimp, peeled and deveined 

  • 1 lime, juiced

  • ½ teaspoon kosher salt

  • 4 (4-inch) corn tortillas

  • ¼ cup feta cheese

Preparation:

  • Shred the lettuce. Chop the pineapple, tomatoes, cilantro, and green onions. Mince the garlic.
  •  In a medium saute pan, combine the black beans, cumin, and tabasco. Mash with a potato masher.
  • Heat a medium nonstick pan to medium high heat; add oil. Once pan is very hot, add shrimp. Then add cilantro, garlic, lime, and salt. Cook until shrimp is bright red.
  • Place ¼ cup of black beans on each tortilla. Top with shrimp, lettuce, pineapple, tomatoes, green onions, cilantro, and cheese.
