Vegetarian White Chili

Veggie lovers, meet your new favorite winter recipe! With a powerhouse line-up of superfoods and a creamy base, what’s not to love about this Vegetarian White Chili? Creamy Vegetarian White Chili

Ingredients

  • 1 Tbsp olive oil
  • 1 white onion, diced
  • 1 green bell pepper, diced small
  • 1 jalapeno, diced
  • 3 garlic cloves, minced
  • 1 Tbsp cumin
  • ¼ cup all-purpose flour
  • 4 cups low-sodium vegetable broth
  • 3 15-ounce cans Great Northern beans, drained and rinsed
  • 1 4-ounce can chopped green chilies
  • ¾ cup frozen corn
  • 2 cups warmed whole milk (use non-dairy if wanting to make the recipe vegan)
  • Salt / Pepper, to taste
  • Lime juice, to taste
  • garnish options: cilantro, avocado, tortilla chips, pickled jalapenos, radish slices, hot sauce

Power Food Fruit Smoothies

Here’s to 2017! What changes do you plan to make in the next year? Some of the best advice I’ve received is to focus on changing my daily habits. Over time, these daily changes will add up to a lifestyle change! This said, a great way to make an attainable change is to start the year off with healthy choices. For you, this may look like replacing your grab and go granola bar in the mornings with a  power food filled Fruit Smoothie. Half Baked Harvest has compiled an excellent guide to smoothie making that will jumpstart your resolutions. Happy New Year!

Strawberry Acai Smoothie

Ingredients

  • 1/2 red beet (1 small), peeled and roughly chopped (or grated if you have a weak blender)
  • 1 cup frozen (or fresh) strawberries
  • 1/2 cup frozen (or fresh) raspberries
  • 1 ripe fresh (or frozen) banana
  • 1 teaspoon acai berry powder*
  • 1 teaspoon vanilla
  • pinch of salt
  • 1 cup milk of choice (I use coconut, almond or goat milk)
  • 1/2 cup plain Greek yogurt (use coconut yogurt if vegan)
  • 1 tablespoon dried goji berries (optional)

Optional Toppings:

  • plain Greek yogurt
  • bee pollen, chia seeds, hemp seeds or ground flax
  • granola
  • fresh fruit and or goji berries
  • almond butter or other nut butter

Gingerbread Granola

Happy Holidays! One of the things I love most about the season is celebrating with family and friends as we gather together to share a meal. Are you hosting a festive brunch this year? Bring seasonal flavor to an unexpected breakfast item with this recipe. Just one handful of Gingerbread Granola will have you hooked! Even better, all the ingredients are Vegan approved. Gingerbread Granola

Ingredients

  • 3 1/4 cups rolled oats (GF for gluten free eaters)
  • 1 3/4 cups raw nuts (I used almonds, pecans and a few walnuts)
  • 3 Tbsp organic cane sugar (or sub extra molasses or maple syrup mixed in with wet ingredients)
  • 1/4 tsp sea salt
  • 1/2 Tbsp ground cinnamon
  • 3/4 tsp ground ginger
  • pinch ground cloves (optional)
  • 1/4 cup coconut or olive oil
  • 1/3 cup maple syrup (sub agave, or honey if not vegan)
  • 2 Tbsp molasses
  • (optional) 1 tsp. vanilla extract

Asparagus Salad with Tumeric Tahini Dressing

What’s the deal with Tumeric? If you’re hesitant to jump on the wellness bandwagon, no need to sweat. This legendary ingredient has been tried and true for generations. Originally, Tumeric hails from China and India as a natural anti-inflammatory. More recently, Tumeric has made huge waves in the wellness industry and has been proclaimed as one of the most healthiest foods in the world. Tumeric can be incorporated into your diet through teas and various recipes, but to start I’ve included a yummy salad below! Try this Asparagus Salad with Tumeric Tahini Dressing for a lovely protein-enriched meal.

Asparagus Salad with Tumeric Tahini Dressing

Ingredients:

For the Asparagus:
  • 2 cups asparagus
  • 1/3 cup diced scallion
  • 2 teaspoons olive oil
  • Salt
  • Pepper
For the Dressing:
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons tahini
  • 1 teaspoon Turmeric
  • 1/4 teaspoon salt
For the Salad:
  • 3 to 4 cups baby spinach
  • 1 cup cooked kamut
  • 1/4 cup feta
  • 3 tablespoons parsley
  • 2 hardboiled eggs
