Vegetable Quinoa Fritatta

Yes this is as yummy as it sounds/looks. You will not want to switch to another type of breakfast. Trust me.

“This delicious Vegetable Cheddar Quinoa Frittata makes a protein-packed breakfast or brunch.  It is a guest favorite at Skyterra Wellness Retreat & Weight Loss Spa, where it is served over fresh greens and tomatoes with warm bacon vinaigrette for a delicious complete meal.”

Ingredients
  • 1 – 1/2 cups Quinoa, cooked
  • 2 tablespoons extra virgin olive oil
  • 1 each red onion, small diced
  • 2 each zucchini, rinsed, small diced
  • 1 each yellow squash, rinsed, small diced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon white pepper, ground
  • 2-4 tablespoons basil, chopped
  • 12 each eggs, local
  • 1/2 cup whole milk, local if possible
  • 3/4 cup cheddar cheese, shredded, local cheese if possible (high quality)
Directions
  1. Preheat oven to 350 degrees.
  2. Cook quinoa according to package and set aside.
  3. Preheat a large saute pan to medium heat. Add extra virgin olive oil followed by the red
  4. onion.
  5. Cook onion for 3-4 minutes then add the zucchini and summer squash. Add the salt and
  6. pepper and cook for another 5-10 minutes until vegetables are soft and cooked through.
  7. In a medium mixing bowl, add eggs and milk and whisk until combined.
  8. Spray a 13 x 9 glass casserole pan with oil.
  9. Evenly distribute the quinoa, vegetables and basil at the bottom of the casserole pan.
  10. Pour the egg/milk mixture on top of vegetables and quinoa. Top with cheddar cheese.
  11. Bake frittata in oven for 35-40 minutes or until the center has set (doesn’t jiggle).
  12. Allow the frittata to rest for at least 15-20 minutes prior to slicing. You can allow it to
  13. rest in the oven (turn off heat). Slice the frittata into 8 portions.
 
Notes
One serving is an approximately 4×4 inch slice.

Grilled Portobello Mushroom Sliders

All my vegetarian/healthy friends, this is going to be the perfect appetizer for a barbecue or maybe a party where you need finger foods, but won’t have to feel guilty about eating it! Special thanks to PureRejuv Wellness Center.

Smoky Baby Portobello Sliders with Smoked Gouda

Ingredients
  • 6 baby Portobello stuffing mushrooms
  • 1 tablespoon olive oil
  • 1 red onion sliced
  • 1 pinch salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1/2 teaspoon chili powder
  • 3 ounces smoked Gouda cheese
  • 1/2 cup BBQ sauce
  • 6 organic slider buns
    Directions
  1. Over medium-high heat in a skillet, add 1/2 tablespoon of the olive oil.
  2. Next add the sliced onion with a pinch of salt. Let caramelize, stirring occasionally (about 10 minutes). Turn off heat and set aside.
  3. Brush mushrooms with remaining olive oil and sprinkle both sides with pepper, paprika, onions, and chili powder.
  4. Heat your grill (or skillet) on medium heat; cook the mushrooms until juicy and tender (about 5 minutes on each side). In the last minute of cooking, add a slice of Gouda cheese on top to melt.
  5. Lightly toast the buns on the grill for even more flavor while cooking the mushrooms.
  6. Assemble the sliders by placing the mushrooms on the bun, top with the caramelized onion and a generous drizzle of BBQ sauce.

Creamy Vegetarian White Chili

Ingredients

  • 1 Tbsp olive oil
  • 1 white onion, diced
  • 1 green bell pepper, diced small
  • 1 jalapeno, diced
  • 3 garlic cloves, minced
  • 1 Tbsp cumin
  • ¼ cup all-purpose flour
  • 4 cups low-sodium vegetable broth
  • 3 15-ounce cans Great Northern beans, drained and rinsed
  • 1 4-ounce can chopped green chilies
  • ¾ cup frozen corn
  • 2 cups warmed whole milk (use non-dairy if wanting to make the recipe vegan)
  • Salt / Pepper, to taste
  • Lime juice, to taste
  • garnish options: cilantro, avocado, tortilla chips, pickled jalapenos, radish slices, hot sauce

Power Food Fruit Smoothies

Here’s to 2017! What changes do you plan to make in the next year? Some of the best advice I’ve received is to focus on changing my daily habits. Over time, these daily changes will add up to a lifestyle change! This said, a great way to make an attainable change is to start the year off with healthy choices. For you, this may look like replacing your grab and go granola bar in the mornings with a  power food filled Fruit Smoothie. Half Baked Harvest has compiled an excellent guide to smoothie making that will jumpstart your resolutions. Happy New Year!

Strawberry Acai Smoothie

Ingredients

  • 1/2 red beet (1 small), peeled and roughly chopped (or grated if you have a weak blender)
  • 1 cup frozen (or fresh) strawberries
  • 1/2 cup frozen (or fresh) raspberries
  • 1 ripe fresh (or frozen) banana
  • 1 teaspoon acai berry powder*
  • 1 teaspoon vanilla
  • pinch of salt
  • 1 cup milk of choice (I use coconut, almond or goat milk)
  • 1/2 cup plain Greek yogurt (use coconut yogurt if vegan)
  • 1 tablespoon dried goji berries (optional)

Optional Toppings:

  • plain Greek yogurt
  • bee pollen, chia seeds, hemp seeds or ground flax
  • granola
  • fresh fruit and or goji berries
  • almond butter or other nut butter

Gingerbread Granola

Happy Holidays! One of the things I love most about the season is celebrating with family and friends as we gather together to share a meal. Are you hosting a festive brunch this year? Bring seasonal flavor to an unexpected breakfast item with this recipe. Just one handful of Gingerbread Granola will have you hooked! Even better, all the ingredients are Vegan approved. Gingerbread Granola

Ingredients

  • 3 1/4 cups rolled oats (GF for gluten free eaters)
  • 1 3/4 cups raw nuts (I used almonds, pecans and a few walnuts)
  • 3 Tbsp organic cane sugar (or sub extra molasses or maple syrup mixed in with wet ingredients)
  • 1/4 tsp sea salt
  • 1/2 Tbsp ground cinnamon
  • 3/4 tsp ground ginger
  • pinch ground cloves (optional)
  • 1/4 cup coconut or olive oil
  • 1/3 cup maple syrup (sub agave, or honey if not vegan)
  • 2 Tbsp molasses
  • (optional) 1 tsp. vanilla extract

  • 15 grape or cherry tomatoes, halved

Festive Pomegranate Guacamole

Happy December! In the spirit of holiday parties, gift giving and peace on the earth, we’ve rounded up a few of our favorite holiday recipes! Festive Pomegranate Guacamole

Ingredients

  • 4 medium ripe avocados, pitted and diced
  • 2 tablespoons fresh lime juice
  • 2 garlic cloves, pressed or minced
  • 1 teaspoon salt
  • ½ medium red onion, chopped
  • ¼ cup fresh cilantro, mostly leaves, chopped
  • 1 to 2 jalapeños (or 1 serrano pepper), seeded and chopped
  • 1 medium pomegranate, deseeded (about 1 cup worth of pomegranate arils)
  • Entirely optional: ½ cup crumbled feta
